Comté is made of unpasteurized cow's milk in Eastern France, where it is ripened a minimum of 4 months to 18 or 24 months. Comté was one of the first few kinds of cheese to receive an AOC status in 1958. Comte is considered one of the finest cheeses in the world; known for its dense, creamy texture and fruity flavor. A wedge of Comte reveals a pale yellow interior and a texture that can vary from silky to crystalline.
