Valdeon, a hearty blue made with a blend of pasteurized cow and goat milk. Carefully wrapped in giant sycamore leaves, this beautiful cheese is aged for a minimum of two months in caves. Sycamore Plageru" leaves allow certain bacteria to penetrate the cheese and add complexity. La Caseria Valdeon is extremely creamy with dense, inky blue veins throughout the paste. The aroma has hints of damp earth, tobacco and vanilla."
