Ombra is a sheep's milk cheese aged over 5 months. During the maturation, the wheels develop a beautiful natural rind and some crystallized proteins, which elevate the mouthfeel. Almost reminiscent of a sheep’s milk Parmigiano, Ombra is a truly distinctive cheese. It offers full flavors of grass and nuts with a balance of sheep's milk tanginess.
