Pancetta Americana is seasoned with rosemary, peppercorns and bay leaf then cured flat in the rustic 'tesa' style. Berkshire cross pork has rich creamy fat and a great meat-to-fat ratio. Excellent for crisping lightly into lardons, wrapping vegetables or fish, or enriching a soup or sauce. Fully dry cured for 2 months this product can be eaten with or without cooking.
