Mitica Pecorino Pepato is a raw sheep's milk cheese that has a depth of flavor balanced by the zest of black peppercorns. Pecorino Pepato is aged for about 4 to 6 months during which it develops a flaky yet creamy consistency. The salty, tangy citrusy flavors are complemented by the spiciness of the peppercorns. Pepato (“peppered”) is traditionally shaved or grated over top salads, polenta, and pastas or risotto.
