San Simón da Costa by Prestes is made from pasteurized cow’s milk. The cheese is cured for a period of 45 days, then smoked over birch wood chips. It is a semi-hard cheese with creamy, buttery texture and mild smoky flavor. Cheeses san Simon had a caramel colored exterior and a golden inside.
