V de Navarra cheese has an intense smoky flavor and a compact texture. It is produced in the mountains of the Navarra region of Spain using the pure, raw milk of laxta and carranzana sheep. During production, natural rennet is incorporated, then the cheese is pressed, smoked, and matured for 2 to 6 months.
