UBRIACO DEL PIAVE CHEESE
Ubriaco del Piave is a delectable semi-soft cheese made using raw cow’s milk of farmers in the Piave region of Veneto, Italy. The cheese is preserved by immersing it in fermenting wine must during the grape harvest of Cabernet, Merlot, Clinton and Raboso. After 2 month in the red wine, Ubriaco is enclosed in linoleum towels and left to age for an extra 6 to 10 months. This creates a violet rind which has remnants of grape seeds and leaves. Due to its red wine baths, Ubriaco del Piave is fondly named “Formaggio imbriago,”which literally translates as “drunk cheese.” Ubriaco has a soft, supple texture when young that slowly hardens and gets more aromatic with age. The sharp and robust flavor has nutty and fruity undertones, making it a suitable pair for Cabernet Sauvignon or Chianti.
